    For spring festivities we have selected Champagne Jeandon, paired with M.Chapoutier wines.

    Champagne Jeandon

    It all started with the Jeandon great-grandparents settled in the magnificent Marne Valley, farming agricultural land, meadows and orchards located around Dormans.

    When Gérard and Alain Jeandon, their sons, took over the business, they experienced a real upheaval in their activity and from 1972, they planted vines on the best exposed hillsides, to produce their own Champagne.

    It is also between brothers that Emilien and Benjamin have chosen to continue this beautiful story. Their various backgrounds and additional training, agricultural management for Benjamin and industry for Emilien, naturally led them to choose sustainable viticulture.

    This family passion remains the major ingredient of the Jeandon Père et Fils cuvées.

    Cuvée Brut Réserve 75cl

    A pretty, shiny gold.

    Aromas Evolved nose, with notes of exotic yellow fruit jelly and mango
    Texture Harmonious, structured palate with aromas of stewed fruit. The evolution of this wine brings softness, with a finish bearing light aromas of lemongrass
    To be paired with a line-caught fish such as a fillet of sea bass with orange and star anise sauce.
    Grape variety 25% Pinot Meunier / 50% Chardonnay / 25% Pinot Noir

    Cuvée Brut Blanc de Blancs Prestige 75cl

    A pale gold color with green highlights. 

    Aromas Citrus notes and aromas of peaches and Mirabelle plums.
    Texture Fresh on the palate a long, beautiful chalky finish.
    To be paired with grilled Saint-Pierre fish
    Grape variety 100% chardonnay.
    Optimum serving temperature between 7° and 8°C (6hrs in the refrigerator or 1hr in an ice bucket).

    Cuvée Brut Blanc de Meuniers 75cl 

    Deep golden yellow color.

    Aromas Light woody note, enhanced by ripe fruit aromas and a hint of bourbon vanilla. Gourmet aromas of custard.
    Texture The palate is greedy with melted acidity. Very pleasant on the palate, with good length.
    To be paired with a sweet and sour dish
    Grape variety 100% Pinot Meunier

    Cuvée Brut Rosé 75cl 

    A beautiful salmon color. 

    Aromas A pronounced initial nose of wild strawberries accompanied by spicy pepper notes. 
    Texture Light, refreshing palate with mixed aromas of strawberry and watermelon.
    To be paired with veal liver with balsamic vinegar
    Grape variety 21% Chardonnay / 62% Pinot Noir / 17% red wine

    M. Chapoutier Wines

    Located in Tain L’Hermitage, in the Rhône Valley for over 210 years, Maison M. CHAPOUTIER produces the finest wines, respecting the natural balance and terroirs that give them birth.

    It took a new turn in 1990 with the arrival of Michel Chapoutier, who introduced biodynamic viticulture to his estates.

    A pioneer in this field, Maison M. CHAPOUTIER has made it the founding principle of its philosophy.

    Mathilde’s selection

    Michel’s daughter Mathilde explored various wine regions around the world, in order to create a selection of her favorites. 

    We selected two cuvées from Mathilde’s Selection.

    For M. CHAPOUTIER, a wine must always be paired with food. Always. It never exists alone. It is therefore only natural that he crossed paths with renowned French chefs to create a range with each of them. We have selected two wines from these partnerships: one of the range created by Anne-Sophie Pic, and one of Joseph Viola‘s wines.

    Details about the wines:

    Aurisso 2023 Côte de Provence Sainte Victoire

    Aromas Intense complex aromas, nicely accentuated by floral notes
    Texture Palate rich, long and velvety on the palate, combined with a freshness which gives the wine an ethereal touch. Very fine character
    To be paired with King shrimps a la plancha
    Grape variety Rolle / Cinsault / Grenache Noir / Syrah
    Optimum serving temperature between 10° and 12°C
    Keep away from light and heat in a dry place.

    Climate The parcels are located to the east of Aix-en-Provence, at the foot of Aurélien and Sainte-Victoire mountains. Provence is known for its sunny climate. The rain in autumn and spring is followed by a hot, dry, windswept summer.

    Harvesting is carried out at night, by machine.

    Vinification Short, cold maceration on the skins. Low temperature fermentation. Constant protection against oxygen to preserve aromatic potential.

    Maturing 5 months in stainless steel vats.

    Solèdre 2023 Rhone Valley Duche d’Uzes

    Aromas Intense, releasing apricot aromas with subtle notes of tropical fruits.
    Texture Well balanced on the palate. Powerful on entry offering up notes of ripe fruit. the wine’s smoothness (fat) combines perfectly with it’s freshness (acidity), showing lovely harmony on the palate, with a hint of iodine on the finish.
    To be paired with Antipasti or red mullet with citrus butter
    Grape variety Roussanne / Marsanne / Viognier / Grenache Blanc
    Optimum serving temperature between 10° and 12°C
    Keep away from light and heat in a dry place.

    Climate The parcels of vines grow on slopes, where the soil drains well and warms up quickly in the spring, helping the grapes to ripen early.

    Harvesting is carried out at night, by machine, to prevent oxydation and preserve the grapes’ aromatic properties.

    Vinification Total destemming followed by a light, cold maceration of the skins and a gentle pressing. Cold static settlingShort, cold maceration on the skins. Low temperature fermentation. Constant protection against oxygen to preserve aromatic potential.

    Maturing 5 months in stainless steel vats.

    Côtes-du-Rhône 2023 Joseph Viola et M. Chapoutier Rhône Valley Red wine

    Grape Varieties: Grenache-Syrah.
    Terroir: The clay-limestone soils in the valley between Aygues and Ouvèze enjoy a particularly sunny micro-climate, sheltered from the Mistral wind. A short distance away, Mont Ventoux influences the climate with cool nights (helping the synthesis of polyphenols in the skins). This vineyard situated at altitude (300 to 500 metres) gives the wine its crisp, fresh character.
    Harvest: The grapes, grown in selected vineyard parcels, are picked mechanically, early in the morning, to protect the musts from oxydation and to preserve the varietal aromas.
    Vinification: After destemming, the grapes are vinified in concrete tanks for four weeks. Pumping over operations are staggered and carried out each day to gently extract the aromatic substances, anthocyanins and tannins. The temperature of the alcoholic fermentation is checked and regulated. At the very end of alcoholic fermentation, the temperature is allowed to rise to 30-32°C to help the polymerization of the tannins. This will be followed by malolactic fermentation (natural deacidification).
    Maturing: Ageing in concrete tanks for 6 months.
    Tasting:
    – Colour: intense garnet red.
    – Nose: powerful and spicy on the nose with subtle red fruit overtones.
    – Palate: big on the palate with lovely freshness and gorgeous red fruit on entry. This is a powerful wine with chiseled tannins and lovely aromatic freshness on the finish.
    Joseph Viola suggests with this wine: shoulder of Limousin lamb confit in its juice.
    Serving Temperature: 16-18°C.
    Ageing Potential: 3-5 years.

    Cornas 2023 Rhône Valley Red wine

    Aromas very black, complex and slightly reductive on the nose. The wine shows notes of ripe, wild black fruit, which are then joined by notes of graphite, carbon and soot.
    Texture massive on entry to the palate with tight,  lovely mineral tautness. Overall, the wine gives a sensation of volume, is full-bodied on the palate, well-structured, meaty and crisp. This is a powerful, distinguished Cornas, which shows a great deal of balance.
    To be paired with Duck confit with lavender and herbs
    Grape variety Syrah
    Optimum serving temperature between 17° and 18°C

    Ageing potential 8 to 10 years

    Soil A blend of grapes from 3 areas in the appellation:  Foothills made up of alluvium from a highly decomposed granite bedrock (gore). Early ripening areas (Cayret, Mazards, etc.). Granite slopes with more limestone, located in the north of the appellation (Arlettes). A later ripening area at higher altitude (Saint-Pierre) composed of granitic sands with limestone and silt deposits.

    Harvesting is is carried out by hand.

    Vinification Traditional vinification in concrete tanks. Extraction using the pumping over method. 4 week maceration period.

    Maturing The wine is aged for 14 months in oak barrels previously used for one to two vintages.
